I'd like to ask him what was his favourite or most satisfying thing/play/film/appearance he's done, & why.
I know playing Mac may have brought him to a lot of people's attention but it may not necessarily be his favourite role?!

I'd ask him what kind of character he'd always wanted to play most of all - like, one from his head - do you reckon he'd be a guy that'd want to play a superhero in a film? or would he like to act as a particular kind of person, or act a part of an actor, or someone really tiny, obviously doctor he's already done amongst others. I think that'd be interesting to know.
Then I'd write an entire screenplay about that character and ask him to be in it. Muahahahaha! =P
